At Carstens Brasserie we take our guests on a journey through the Netherlands with ingredients from our own soil and our own waters. As a Sous Chef, you ensure memorable guest experiences by creating a place where you can go back to the country while being in the heart of Amsterdam, at Park Plaza Victoria Amsterdam near Central Station. Carstens Brasserie is an urban brasserie that combines city life with products from agricultural areas and fishing villages.
We are looking for a Sous Chef:
- With previous experience as a (Junior) Sous Chef in Dutch and French cuisine and with a strong passion for the culture
- Who can lead, coach and inspire a start-up team (kitchen and stewarding) at an operational level
- You take full responsibility in the absence of the chef, you are also someone who sets a good example by providing training on the job
- Who is ultimately responsible for everything the kitchen prepares. From overseeing and managing the mise-en-place in the afternoon to leading the ministry in the evening
- Who uses culinary skills and attention to detail to maintain high standards in quality, freshness, service, hygiene and health & safety Who proactively contributes to menu development and shares fresh ideas for ingredients, dishes and concepts
- You will assist the Chef in compiling the menus and ensure that they are in line with the standards of the company
- Who puts together the kitchen team and makes work schedules
- Who likes to adapt to special requests or have face-to-face contact when necessary
