We are looking for a skilled and passionate Baker to join our production team. This role is intended for a culinary professional who holds or is looking to finish their requirements to achieve their Red Seal Endorsement (RSE).
In this position, you will move beyond basic prep to master the science and art of baking in a high-standard environment. Whether you are already a certified Journeyperson or a senior apprentice completing your final competencies, you will be expected to uphold the Red Seal Occupational Standard (RSOS) for the baking trade, ensuring consistency, quality, and technical precision in every batch.
In alignment with the national standards for the Baker trade, your duties include:
Production Management: Prepare a wide variety of breads, rolls, pastries, and desserts from scratch, ensuring all products meet the shop’s quality and aesthetic standards.
Dough & Batter Preparation: Master the complexities of fermentation, proofing, and temperature control for yeast-raised products, laminated doughs, and chemically leavened batters.
Oven Operation: Expertly manage deck, rack, and convection ovens, adjusting bake times and temperatures based on product requirements and environmental factors.
Finishing & Decorating: Apply advanced techniques for icing, glazing, and decorating cakes and pastries to create a professional, "Red Seal" quality presentation.
Sanitation & Safety: Maintain a clinical level of cleanliness, adhering to HACCP and provincial food safety regulations. Perform equipment maintenance and safety checks.
Technical Math: Scale recipes accurately, perform baker’s percentage calculations, and manage inventory to minimize waste and ensure cost-effectiveness.
Mentorship: If certified, supervise and train junior bakery staff. If finishing requirements, maintain your logbook and participate in the final sign-off of Major Work Activities (MWAs).
Certification Status: Must be a Journeyperson or a Senior Apprentice currently looking to finish their requirements to achieve their Red Seal Endorsement (RSE).
Trade Expertise: Strong knowledge of ingredients (flour types, fats, leavening agents) and their chemical reactions.
Physical Stamina: Ability to stand for long shifts, lift heavy bags of flour (20kg+), and work in a high-temperature kitchen environment.
Early Morning Availability: Flexibility to work traditional bakery hours (early mornings, weekends, and holidays).
Attention to Detail: A commitment to consistency in weight, texture, and flavor profile across large-scale production.
