Bakery Kitchen Manager
The job of the kitchen manager is to help maintain a motivated, positive, and productive pastry team through support, organization, and communication. This person has exemplary baking and pastry skills and works closely with the head baker to ensure that Tandem is producing the most delicious and attractive products in the most efficient and graceful way possible.
To achieve success the production manager must perform the following:
- create and maintain a supportive environment for pastry staff, including sensitivity to employee needs and dynamics
- weekly production meetings with head baker
- weekly sales and forecasting meeting with FOH manager
- monthly menu meetings with head baker and lead baker
- assist head baker in hiring and interviewing
- plan and conduct employee reviews in accordance with company policy
- make the schedule for the bakery employees
- plan and conduct pastry team meetings regularly
- responsible for maintenance and cleanliness of the kitchen, along with equipment maintenance
- schedule and implement staff training
- assist Head Baker in quality control; tasting pastries, watching bakers methods, adjusting methods when necessary.
- available to pastry and counter staff for questions and support
- responsible for managing and delegating tasks related to ordering and inventory, in addition to costing ingredients and recipes
- Bring in and implement new ideas in conjunction with bakery culture (for example new recipes, adjusted recipes, pop ups, special events, charity, workshops, team projects)
- create and implement efficient and organized systems
- assist in planning and executing special events when needed
- designing and maintaining a living production schedule:
- help keep track of seasonal pars, and edit production schedule accordingly
- coordinate the production schedule to be flexible based on daily needs
- make special production schedules for busier times (holidays etc)
- delegate to bakers the need and responsibility to constantly check in with production schedule and edit the day’s list as needed
- take charge of day’s pastry production, or delegate, helping other bakers work efficiently and effectively
Requirements:
- demonstrated enthusiasm for service and teamwork
- perform daily baking duties efficiently in a high volume environment
- working quickly, efficiently, and with focus
- consistent attendance and punctuality
- excellent baking/pastry skills or knowledge with a desire to always improve
- ability to focus on tasks and take direction in an open kitchen
- good problem solving in the moment, proactive response and resolution
- excellent communication and listening skills with coworkers, managers, customers
- consistent attention to detail, cleanliness, and organization
- ability to self direct during slow periods
- ability to perform physical tasks - lift 50 lbs above waist
- ability to instill and enforce high levels of efficiency in all aspects of bakery production
Notes
- this is a full time salaried position that reports to the head baker
- benefits include full health insurance and 2 weeks paid time off per year, 401k after one year of employment
- salary is determined based on experience
